Fried Zucchini recipe

Dear Members and Guests,

Many of you asked Linda Galano for her  Fried Zucchini recipe served at our February 2017 meeting.  She was gracious to share it with us:  

6 to 8 Italian Zucchini, rinse and cut ends off
Slice not too thick or too thin lengthwise.
Whisk 5-6 eggs with salt and pepper.  Cover each zucchini piece with flour. Shake off excess, dip in egg mixture, and fry in olive oil on medium to medium high heat  until brown.  Flip over then lay on paper towels. Add a little more salt and pepper and parmigiano cheese.
